Yum! ROASTED PEANUT AVALAKKI! Avalakki, the word used to describe fried up “poha” or beaten rice, is a staple in any South Indian household for breakfast! We like to have it any hour of the day, ha! You take the dried poha, run it under water, and then fry it with things such as roasted peanuts, lime juice, tamarind, cumin, spice powders, and green chili, as we have here. It was that much more delicious after we added some lightly fried green tomato, as well! Dispelling the myth that Indian food is “all carbs”, we used RED RICE POHA, stirred in some microgreens, and included a side of black-salted yogurt.
