The secret, secret ingredient to the popular South Indian dish, Vangibath…… A cast-iron wok! Vangibath is traditionally made with Eggplant (Vangi-) and Rice (-bath) but we like to mix things up at Spice Mission and the version pictured here is with quinoa, frozen/fresh fenugreek leaves and fingerling potatoes.
