We made this tangy QUINCE-GREEN TOMATO PICKLE & CILANTRO-MORINGA LEAF THAMBLI : perfect autumn pairing with pink rice . You will find quince in your local greenmarket, right about now, if you live in the US, and it’s dry & slightly chalky raw form gave us an idea to sub it for raw mango! We love to add a healthy dollop to the side of our rice plate with this mouth-watering pickle, and then ladle on the cooling Thambli (made with coconut, green chili, & salty buttermilk).
